This is a very simple, hearty and nourishing soup, thickened with bulgur wheat which adds a lovely texture and a rich, nutty flavour. You can find dishes like this all around North Africa and the Middle East, and it makes a really satisfying and inexpensive meal with some delicious spicy flavours from our Mezze Legend blends!

  • 1 large onion - finely chopped
  • 6 tomatoes - halved
  • 2 cloves of garlic - finely grated or crushed
  • 1 lemon
  • 10g bunch of parsley (optional) - roughly chopped
  • 2 tbsp tomato puree
  • 1 stock cube (chicken or vegetable) (optional)
  • 75g bulgur wheat or use couscous
  • Good quality olive oil and crusty bread to serve
