Pachadi is a yogurt-based condiment that originates from Southern India.

Vegetables are lightly fried with spices to soften, then yogurt stirred in once they’ve cooled to make a cooked version of a raita.
It adds extra vibrant colour, texture and a cooling element to your meal.
