Topopo means ‘volcano’ in Spanish, and this fabulous salad is usually served in Mexican restaurants in Arizona shaped into a cone like a huge volcano! It’s a delicious combination of beans and veg tossed in a tangy dressing, and makes a great side dish or light lunch.

  • 150g mixed veg (any combinations of peas, carrots, sweetcorn etc - frozen mixed veg is perfect for this!)
  • ½ an iceberg lettuce or 1 romaine lettuce
  • 2 tomatoes
  • 1 avocado (optional)
  • 50g cheddar cheese (optional)
  • 400g tin of black beans
  • 2 tbsp vinegar (white wine or cider vinegar is best)
  • 1 tsp sugar
