This vegetable kurma is influenced by Southern Indian cooking, and so uses coconut rather than yogurt or cream to give the dish richness and body. It’s a much lighter and more fragrant dish than North Indian kormas, and makes a great side dish or main (with a dhal, rice and chutney or pickle) for a vegetarian meal.

  • 750g mixed veg (eg aubergine, carrots, cauliflower, potatoes etc.) - peeled if necessary and cut into small bite-size pieces
  • 1 onion - finely chopped
  • Fresh ginger - finely chopped to make 1 tbsp
  • 10g bunch of coriander - roughly chopped
  • 2 tbsp tomato puree
  • 20g desiccated coconut
  • 20g cashews or almonds
