Xacuti (pronounced ‘sha-koo-tee’) is a Goan curry made with lots of fresh coconut, chilli and toasted spices. It’s an incredibly rich and deeply flavoured curry, with a slightly spicy, tangy flavour profile from the addition of vinegar - an ingredient widely used in Goa as a legacy of the Portuguese settlers.

  • 500 diced chicken (thighs are best) or use baby potatoes for a veg version
  • 1 large onion - ½ thinly sliced, ½ roughly chopped
  • 2 cloves of garlic - roughly chopped
  • 2 tbsp tomato puree
  • 200ml full fat coconut milk
  • 30g desiccated coconut
  • 3 tbsp vinegar (white wine or cider vinegar is best)
