This is a very simple sauce that’s incredibly useful on the side of any Mezze Legend meal to add a cooling element. The use of yogurt in this way dates back to the Persians who introduced sauces like this to the rest of their empire stretching from the Mediterranean all the way to North India.

  • 1 small clove of garlic (optional) - finely grated or crushed
  • 10g bunch of soft herbs (eg mint, parsley, coriander, dill etc) - finely chopped
  • 150g natural yogurt (full fat is best)
