  • 50g shallots or ½ a very small red onion - roughly chopped
  • ½ cucumber - peeled, deseeded and thinly sliced
  • 2 cloves of garlic - thinly sliced
  • 25g sugar
  • 2 tbsp vinegar (rice, white wine or cider vinegar is best)
