This is a very simple stir-fry dish, but the way that aubergines soak up the flavours they're cooked with makes it a much more delicious combination than it first appears! It goes well with all sorts of different Noodle Legend main courses, and can even be a veggie main course in its own right.

  • 2 aubergines - cut into large bite-sized pieces
  • ½ a bunch of spring onions - thinly sliced
  • 3 cloves of garlic - finely chopped or crushed
  • Fresh ginger - finely chopped to make 1 tbsp
  • 2 tbsp soy sauce (any type)
  • 1 tsp sugar
  • 2 tbsp cornflour
