Black Bean and Sweetcorn Quesadillas with Raw Tomato Salsa

This months free recipe is a simple quesadilla (a crispy tortilla filled with cheese) made with beans and sweetcorn for a lighter alternative to a standard meaty filling. They're served here with a delicious fresh tomato salsa to make a fabulous (and very easy!) summer meal.

Shopping List

  • 2 corn on the cobs or use 400g approx. tin of sweetcorn - drained
  • 4 tomatoes - halved
  • 1 lime
  • 10g bunch of coriander (optional) - roughly chopped
  • 2 x 400g tins of black beans or use cannellini or borlotti beans - drained and rinsed
  • 4 large tortillas or wraps (or use 8 mini tortillas)
  • 200g cheddar - coarsely grated
  • Sliced avocado and sour cream to serve
