Despite its name it’s unlikely this dish hails directly from Mumbai but is more of an amalgamation of various Indian potato dishes.

A bit like an Indian potato hash, as well as being a versatile side dish, it’s fantastic topped with a fried egg for breakfast!

  • 1 onion - thinly sliced
  • 2 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 2 tsp
  • 25g bunch of coriander - roughly chopped
