‘Blackening‘ is a modern technique associated with Cajun cookery and involves the caramelisation of spices on the outside of chicken or fish to provide a delicious edible crust. The chicken is served here with two Cajun staples - a fiery hot sauce and dirty rice (a delicious concoction of rice, vegetables and traditionally chicken liver or sausage).

This kit contains the recipe and all of the spice blends needed to cook the different components of the meal - all you need to do is add a few fresh ingredients and follow the simple steps!

  • 4 x 150g chicken breasts or salmon fillets
  • 100g chorizo, smoked sausage, bacon or chicken liver
  • 2 sticks of celery
  • 1 medium onion
  • 1 lemon
  • 50g butter
  • 300g standard long grain or basmati rice (not easy cook)
  • 1 tbsp tomato puree
  • 1 tbsp vinegar (white wine or cider vinegar is best)
