Ceylon chicken features all the key flavours of Sri Lankan cooking with plenty of coconut, chilli, and lime. Sri Lankan spice blends tend to include lots of dry-roasted spices that give a really deep, rich flavour and here we’re toasting our JEERA BLEND with desiccated coconut to flavour this delicious curry.

  • 500g diced chicken (thighs are best)
  • 1 red onion - thinly sliced
  • 3 cloves of garlic - finely grated or crushed
  • Fresh ginger - finely chopped to make 1 tbsp
  • 2 green chillies - thinly sliced (seeds removed if you prefer less heat)
  • 1 lime
  • 3 tbsp tomato puree
  • 30g desiccated coconut

Fish instead of chicken - just cook the sauce for 30 minutes then add the fish for 5 minutes at the end
