This rich chicken stew is one of the most popular everyday dishes in Morocco. We're making our own quick preserved lemons in this recipe, but you can also find whole preserved lemons in many supermarkets or online now - just substitute 2 preserved lemons for the fresh used here, and add an extra squeeze of fresh lemon juice just before serving.

Shopping List

  • 4 chicken legs or large thighs - jointed and skin removed if you prefer
  • 1 large onion - finely chopped
  • 3 cloves of garlic - finely grated or crushed
  • 10g bunch of parsley or coriander - roughly chopped
  • 2 lemons - zest removed using a peeler - scrape off and discard any white bits from the peel, then halve the lemon for juicing
  • 50g olives (any type) - drained
  • 20g butter
  • ½ tsp turmeric or use a pinch of saffron (about 10-12 strands)
  • 1 tbsp plain flour

Also Works a Treat With

Chicken breasts - just cook for 20 minutes rather than 45 before adding the preserved lemon
