These delicious Chinese BBQ ribs, coated in a rich tangy sauce flavoured with soy, star anise, cassia cinnamon and ginger, are a real favourite at Spicery HQ and make a deliciously indulgent dinner. They're served with some classic salt & pepper chips seasoned with a fragrant mix of toasted Sichuan pepper, white pepper and 5 spice powder. It's a fantastic combination together with a simple fresh salad on the side!

Shopping list
  • 1kg approx. pork ribs - cut into individual ribs if in a whole rack
  • 1kg oven chips (chunky home-style are best) or make your own
  • 1 bunch of spring onions - thinly sliced
  • 3 cloves of garlic - finely chopped
  • 1 pepper (any colour) - cut into bite-size pieces
  • 1 tbsp tomato puree
  • 3 tbsp soy sauce (any type)
  • 1 tsp vinegar (rice vinegar is best)
  • 1 tbsp sesame oil
  • 2 tbsp sugar
  • 2 tsp cornflour
  • Cucumber salad to serve
