Crushed New Potatoes with Chorizo

Potato is a very popular filling for tacos in Mexico - it's often paired with crumbled chorizo, then cooked on a plancha until deliciously crispy. Here we’re using crushed new potatoes, which combine fabulously with the chorizo in a taco alongside some garlic & herb mayocrema, or even as a brunch dish with a fried egg on top!

  • 100g chorizo, or use vegan chorizo or sausages for a veg/vegan version)
  • 500g new potatoes
  • 10g bunch of coriander (optional)
  • Tortillas and salsa to serve as a taco, or fried eggs to serve as a brunch dish
