Cucumber Soy Salsa

The railroads in the Southwestern states were built in part by Chinese labourers, and their legacy lives on in many of the taco stalls there where you often see chopped cucumber in soy sauce offered as a condiment. The crunch of the cucumber and salty, savoury flavour of the soy sauce really adds something unique to any taco!
