Shopping List

  • 1kg stewing goat on the bone - cut into large chunks or 600g diced goat 
  • 1-2 Scotch bonnet chillies - left whole but pricked with a knife
  • 5g bunch of thyme - left whole
  • 2 cloves of garlic - finely chopped
  • 2 bunches of spring onions - thinly sliced 
  • 1 medium carrot - peeled and coarsely grated
  • 1 lime
  • 1 tbsp sugar (brown sugar is best)
  • 2 tbsp soy sauce (any type)
  • 1 tbsp tomato puree
