Shopping List

  • 4 chicken drumsticks or thighs
  • 200g whole prawns
  • 150g beansprouts
  • 150g shallots or 1 medium red onion - roughly chopped
  • 2 cloves garlic - roughly chopped
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 2 lemongrass stalks - 1 thinly sliced, 1 bashed with a rolling pin then cut into 3cm lengths
  • Mint, coriander and/or thinly sliced red chilli to garnish
  • 1 lime - zested and halved for juicing
  • 400ml full fat coconut milk
  • 1 tbsp tomato puree
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • Dried noodles for 4 (any type is fine)
