  • 300g lamb or beef mince or use soy mince for a veg version
  • 1 red onion
  • 2 tomatoes
  • ½ cucumber
  • 25g bunch of coriander
  • 1-2 green chillies (optional)
  • ½ lemon
  • 150g natural yogurt (full fat is best)
  • 100g cheddar cheese
  • 100g standard long grain or basmati rice
  • 30g red lentils
  • 400g tin of tomatoes
  • Mango chutney (optional)
  • 4 large tortillas or wraps

Goes Great With

A bowl of tortilla chips and extra salsa to serve

Finely chopped mushrooms or cooked puy or black lentils in place of the mince

Really super supper Made this for Tuesday night, my tortillas must e slightly smaller than the creator' ones as I got 7 burritos out of the quantities. Recommend substituting Creme Frais for the yoghurt It wound up taking 1hr 20 to make from scratch. well done guys, a great recipe!
