Easy 'One Pot' Noodles

It's so much nicer to enjoy some lovely fresh veg in a light and fragrant broth than a dried instant version, and with this super-easy and delicious recipe it's almost as quick to make at home! Add extra chilli oil for heat, or sprinkle over some crispy fried garlic or shallots to add more texture.

Shopping List

  • 100g mixed veg (eg carrots, peas, sweetcorn, etc - frozen mixed veg is ideal for this!) - cut into small bite-size pieces if large
  • 1 clove of garlic - finely grated or crushed
  • 150g pre-cooked noodles (any type) or use 1 nest of dried noodles (approx. 60g-75g dry weight)
  • 1 tbsp soy sauce (any type)
  • ¼ tsp vinegar (rice, white wine or cider vinegar is best)
  • ½ a stock cube (any type)
  • A pinch of sugar
  • Sesame oil to serve (optional)
