Easy Sizzling Chilli Oil Noodles

This easy recipe uses a uniquely Chinese technique to flavour the dish, whereby boiling hot oil is poured over dry aromatics that then fry and 'sizzle' in the heat, and so impart their flavour and fragrance. It's a simple process but the colour and flavour generated by the sizzling oil is really spectacular and gives a wonderful flavour to this everyday noodle dish.

Shopping List

  • 100g greens (eg tenderstem broccoli, spring greens, pak choi etc) - cut into bite-size pieces if large
  • 1 clove of garlic - finely grated or crushed
  • 150g pre-cooked noodles or use 1 nest of dried noodles (approx. 60g-75g dry weight)
  • 1 tbsp soy sauce (any type)
  • 1 tsp vinegar (rice, cider or white wine vinegar is best)
  • A pinch of sugar
