Easy Sizzling Chilli Oil Noodles

This easy recipe uses a uniquely Chinese technique to flavour the dish, whereby boiling hot oil is poured over dry aromatics that then fry and 'sizzle' in the heat, and so impart their flavour and fragrance. It's a simple process but the colour and flavour generated by the sizzling oil is really spectacular and gives a wonderful flavour to this everyday noodle dish.

Decided to try a quick recipe from the Noodle Legends book and it didn't disappoint! Nice kick of chilli and loved the fried egg on top. Definitely will be added to the dinner rota!

This was really nice and easy, could have had it a wee bit spicier but super quick for mid week. Next time I’ll add prawns I think.

Super quick and easy. Very tasty. Wasn't sure how spicy it would be, but it was pleasantly spicy.
