  • 100g greens (eg tenderstem broccoli, spring greens, pak choi, etc) - cut into bite-size pieces if large
  • 1 clove of garlic - finely grated or crushed
  • A handful of chopped coriander or thinly sliced spring onions (optional)
  • 150g pre-cooked noodles (any type) or use 1 nest of dried noodles (approx. 60g-75g dry weight)
  • 1 tbsp soy sauce (any type)
  • 1 tsp oyster sauce, miso paste (any type) or use 1 extra tsp soy sauce
  • ½ tsp vinegar (rice, white wine or cider vinegar is best)
  • ¼ tsp sugar

The noodle legend kit has transformed my working from home lunch game. Fast enough to make up fresh and so much cheaper than eating out. I used spring greens and had some mushrooms to use up too to make a filling lunch for 1.

We had easy spicy noodles with Sichuan mouthwatering chicken and spring rolls with sweet chilli sauce. These came together to create a slightly hotter chinese combination which we really enjoyed. These noodles really are easy which makes them perfect to add to other dishes without getting overwhelmed. On their own they will make the perfect quick lunch too. What's not to love?
