  • 4 chicken legs or large thighs
  • 1.2Kg mixture of floury potatoes, sweet potatoes, unripe bananas, carrots and/or squash
  • 300g kale or chard or ½ a green cabbage
  • 1 onion
  • 3 cloves of garlic
  • 10g sprigs of thyme
  • 10g bunch of parsley
  • 1 lime
  • 400ml tin of full fat coconut milk
