Curry or ‘karē’ is one of the national dishes of Japan (though it didn’t exist there until the British introduced curry powder just over 100 years ago), and there are three main forms in which it is commonly served: karē raisu (curry over rice), karē udon (curry over noodles) and karē pan (a curry-filled pastry). This version, served with a breaded cutlet known as a 'katsu', is perhaps the most well-known Japanese curry dish, and has become hugely popular around the world. Equipment needed: Large frying pan and a baking tray

  • 4 x 150g chicken breasts
  • 2 medium carrots
  • 1 medium onion
  • 3 cloves of garlic
  • Fresh ginger
  • ½ cucumber
  • 2 eggs (any size)
  • 100g breadcrumbs (Japanese panko are best)
  • 2 tbsp soy sauce (any type)
  • 45g sugar
  • 60g plain flour
  • 300g rice (Japanese sushi rice is best)
  • 65ml vinegar (rice, white wine or cider vinegar is best)

Katsu Curry Blend: coriander, cumin, turmeric, fenugreek leaf, ginger, star anise, black pepper, chilli, garlic, black cardamon, fenugreek, green cardamon, yellow MUSTARD, cinnamon, cloves, mace, bay, nutmeg


Coating Spices: yellow MUSTARD, coriander, Kashmiri chilli, garlic, cumin, black pepper, fenugreek, turmeric, ginger, green cardamon, cinnamon, cloves, chilli


Sesame Seeds: white SESAME, black SESAME

A great meal, and a little bit of a different one for us. We found the sauce to a be a little bit on the sweet side (but - this could've been due to being short on rice vinegar, so have kept this in mind!). Also, as someone who can never manage to nail rice - the instructions for this were SPOT ON! Can't wait to try another one soon!
