Jewelled Rice Salad

This fresh and zingy rice-based salad makes a fantastic dish for a mezze-flavoured summer meal or a BBQ. The combination of orange, lemon and pomegranate seeds with fresh herbs, toasted nuts and dried fruit together with the Mezze Legend spices makes a flavour sensation for this show-stopping centrepiece!

Shopping List

  • 500g cooked rice (use ready-cooked, or boil 250g dry rice until cooked through then drain and leave to cool)
  • 1 clove of garlic - finely grated or crushed
  • 30g bunch of parsley, mint or coriander - roughly chopped
  • ½ pomegranate - seeds only (or 100g ready-prepared seeds)
  • 1 orange - zested then peeled and cut into bite-sized pieces
  • 1 lemon - zested then halved for juicing
  • 100g dried fruit (eg raisins, dates, cranberries etc) - cut into bite-size pieces if large
  • 50g nuts (eg almonds, pistachios, walnuts, hazelnuts etc) - coarsely chopped (if whole)
  • 4 tbsp good quality olive oil

KAMMUN BLEND: 2 tsp

QARFA BLEND: ½ tsp

SUMAK BLEND: 1 tsp
