Khatta meetha baingan literally means ‘sour and sweet aubergine’. It’s a fantastic way to cook aubergines as the flesh becomes really soft and silky, and absorbs all the rich sweet/sour and spicy flavours. Khatta meetha baingan is particularly good scooped up inside chapatis or parathas or served alongside a rich creamy curry.
