Rasam is a southern Indian hot and sour lentil soup that’s often served with plain rice - the tangy flavours of the soup are used as a kind of seasoning spooned over the rice and eaten together.

It’s an extremely nourishing broth, renowned for its health-giving properties, and is particularly good if you have a cold!
