  • 1 medium mango (or 200g ready-prepared) -  roughly chopped
  • 1 clove of garlic - finely chopped
  • Fresh ginger - finely chopped to make 2 tsp
  • 80g sugar 
  • 3 tbsp vinegar (white wine or cider vinegar is best)
