Mezze Legend Pancakes

These pancakes are based on Lebanese atayef, soft pancakes filled with sweetened cream or mild cheese then topped with syrup and chopped nuts. They'd make a lovely alternative to a standard pancake this pancake day, and all of the different textures make this seem a much more sophisticated and complex dish than it actually is to make!

  • 1 orange or lemon
  • 300ml milk (any type)
  • 250g ricotta or marscapone cheese
  • 50g chopped nuts (any type)
  • 1 tsp dried yeast
  • 150g sugar
  • 100g self-raising flour
  • 50g fine polenta, cornmeal or semolina, or use extra self-raising flour
