Mezze Legend Panzanella

Panzanella is an Italian salad that’s a real celebration of summer, made from fresh tomatoes mixed with crispy bread, plenty of olive oil and basil. This Mezze Legend version uses pitta bread instead of Tuscan bread, as well as sumac red onions and roasted red pepper, all mixed together with a delicious, tangy sumac dressing.

  • 1 pepper (any colour)
  • 1 small red onion
  • 1 clove of garlic
  • 6 tomatoes (the riper the better!)
  • ½ cucumber
  • 50g pitted olives (optional)
  • 15g bunch of basil or parsley
  • 2 tsp tomato puree
  • 3 pitta breads
  • ½ tsp sugar
  • 2 tbsp vinegar (red wine or sherry vinegar is best)
  • 6 tbsp extra virgin olive oi
