The Navajo taco is a much-loved Arizonan speciality with a controversial history, as the base of fry bread is a legacy of the meagre dried food rations given to Native Americans when they were moved onto reservations. For many people there, this dish represents their community surviving and then thriving against all the odds.

  • 500g beef mince
  • 1 onion
  • 2 tomatoes
  • ¼ iceberg lettuce or 1 little gem lettuce
  • 100g cheddar cheese
  • sour cream to serve
  • 180ml milk (any type)
  • 1 tbsp tomato puree
  • 400g tin of beans (eg pinto, borlotti, black beans etc) - (including all the liquid from the tin)
  • 300g self-raising flour or use plain flour with 1 tsp baking powder added (plus extra for rolling)
  • Oil for frying (sunflower or vegetable oil is best)
