Navratan means ‘nine-jewelled’ and refers to the nine ingredients (fruit, nuts and vegetables) that are typically used. It’s a delicious creamy curry with a slightly sweet flavour that makes a fabulous vegan main course, or serve as part of a bigger curry feast.
