Noodle Legend Dan Dan Noodles

Traditionally, this Chinese dish was carried by street food hawkers in 2 baskets suspended on a bamboo pole (called a dan), which is where the dish gets its name. The key flavour is Sichuan pepper which is popular for its fabulous citrus flavour and tingling effect on the tongue which becomes surprisingly addictive the more you eat!

  • 250g beef or pork mince
  • 1 bunch of spring onions - thinly sliced
  • 2 cloves of garlic - finely grated or crushed
  • 10g bunch of coriander (optional) - roughly chopped
  • 300g pre-cooked noodles (any type) or use 125-150g dried noodles
  • 3 tbsp soy sauce (any type)
  • 2 tsp vinegar (rice, white wine or cider vinegar is best)
  • 2 tsp sugar
  • 1 tsp tahini or peanut butter or use 1 tsp sesame oil
