Roast Autumn Veg Salad with Garlic Yogurt

This month we’ve got a really easy warm salad made with any combination of root veg you have to hand. The special Mezze Legend blends give a subtle, sweet fragrance and very gentle heat, complemented nicely by the texture of the chickpeas and toasted seeds, all dressed with creamy garlic yogurt to serve - a real autumnal treat!

Shopping List

  • 1.5kg mixture of autumn veg (eg squash, beetroot, parsnips, carrots, potato etc)
  • 1 large onion
  • 1 clove of garlic
  • 10g bunch of parsley (optional)
  • 400g tin of chickpeas
  • 1 tbsp tomato puree
  • 40g pumpkin or sunflower seeds
  • 150g natural yogurt (full fat is best)

Blends Needed

BIBER BLEND: 4 tsp

KAMMUN BLEND: 2 ¼ tsp

QARFA BLEND: 1 tsp

SUMAK BLEND: ½ tsp
