Roast Leeks with Romesco Sauce

This simple vegetarian dish is based on ‘calcotadas’, a meal traditionally eaten in Catalonia where calćots (a type of green onion very similar to spring onions and leeks) are chargrilled then eaten with a delicious and rich romesco sauce to dip them in. It's a fabulous combination that's a real celebration of the arrival of spring!
