Roasted Bhindi Masala

Bhindi, otherwise known as okra or ladies fingers, are a very popular vegetable in India.

Roasting the okra in a really hot oven creates a wonderfully charred and crispy texture and concentrated flavour which works perfectly with the spiced tomato masala.

Shopping List

  • 250g okra - halved lengthways
  • 2 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 2 tsp
  • ½ lemon (optional)
  • 10g bunch of coriander - finely chopped
  • 50g natural yogurt (full fat is best)
  • 2 tbsp tomato puree
  • 1 tbsp flour (gram (chickpea) flour is best)

JEERA BLEND: 2 tsp

METHI BLEND: 1 tsp

MIRCHI BLEND: ½ tsp
