This simple soup is a great way of using up excess summer tomatoes, as well as any leftover tortillas or wraps. Charring the vegetables first really deepens the flavour and adds a subtle smoky element to this delicious dish that's a real treat with all the different textures and colours of the toppings.

  • 1 small onion
  • 2 cloves of garlic
  • 1 lime (optional)
  • 1 avocado (optional)
  • 10g bunch of coriander (optional)
  • 1 tbsp tomato puree
  • 1 tsp sugar
  • 2 large tortillas or wraps
  • 1 stock cube (any type) (optional)
  • A handful of white cheese (eg feta, Lancashire etc) (optional)
  • Sour cream to serve
