Salt & Pepper Chicken Wings

Salt & pepper in a Chinese restaurant tends to mean a toasted mix of salt with both white and Sichuan peppercorns for heat and a tingly numbing sensation, plus a pinch of five spice powder for extra fragrance. We're making a toasted salt and pepper blend here to season crispy chicken wings, and the moreish spicy coating really lends itself to covering every last bit of tender flesh and crispy skin, and of course licking your fingers clean at the end!

To make this recipe, you'll need:

BADIAN BLEND: 1 tsp

LA JIAO BLEND: 1 ½ tsp

MA LA BLEND: 2 tsp

ZHIMA BLEND: 3 tsp

We're huge fans of the salt and pepper chips, so had the give the chicken version a go and it did not disappoint! Showstopper of a meal, will be bringing this one out next time we have guests!! Easiest 5/5 ever

We had these with eggs fried rice and sesame greens, what a lovely mix of flavours. The tips in the new book really help plan ahead too! Will definitely be making this again
