Toasting the spices to make the seasoning mix gives a deeper, more rounded flavour (plus it smells amazing in your kitchen while you do it!).

Shopping List

  • 350g approx. block of firm tofu - drained and pressed dry with kitchen paper or a clean tea towel, then cut into bite-sized pieces
  • 1 small onion - cut into bite-size pieces
  • 1 bunch of spring onions - thinly sliced
  • 4 cloves of garlic - finely chopped
  • 1 pepper (any colour) - cut into bite-size pieces
  • 1 egg (any size) - beaten
  • 2 tbsp soy sauce (any type)
  • 100g cornflour
  • ¼ tsp sugar

LA JIAO BLEND: ⅛ tsp

MA LA BLEND: 1 ½ tsp

ZHIMA BLEND: 4 tsp
