Delicious! Very moreish! The tofu was a bit epic, but using medium rather than firm tofu contributed to that as it was very wet! Wasn’t sure when to use the zhima blend so added at the end. The greens were fresh and tasty and went well with the tofu as suggested. The chilli sauce was excellent and will no doubt make an appearance with lots of other things, even outside of the noodle legend-it’ll be excellent on a bacon butty!

This looks absolutely fantastic, Frances - it looks like you managed to get a lovely colour on the tofu despite it being very wet (pressing to dry it at the beginning will help you get crispier pieces!). The Zhima gets used in step 2 where it is mixed with sugar and the mixture of spices and salt created in step 2 - this then all gets mixed with the tofu in step 11. No problem to just sprinkle it over at the end, though! It looks fab!

Salt and pepper tofu, with stir-fried bean sprout noodles and sesame greens (used Pak Choi). A hit with the whole family, though TBH my son was never going to eat all the greens
