Sambharo

Sambharo is a bit like a Gujarati coleslaw, made by stir-frying shredded cabbage and carrots with spices, lemon and a pinch of sugar. The vegetables should still be slightly crunchy after stir-frying, and the contrast of colours and textures make a lovely side dish to serve alongside any curry main.
