Subji (sometimes called sabzi) simply means a dish of cooked vegetables.
This recipe is extremely versatile and is a great way to ramp up your 5 a day. You can add whatever seasonal veg you have to hand - even frozen mixed veg would work fine!

  • A mixture of seasonal veg (300g green veg OR 500g root veg) - peeled (if necessary) and cut into bite-size pieces
  • 1 medium onion - finely chopped
  • 2 cloves of garlic - finely chopped
  • 10g bunch of coriander (optional) - finely chopped
