The berries are from the Prickly Ash tree and have a numbing, sour, almost citrus or redcurrant flavour as well as a woody, warm scent - delicious in small quantities. Sichuan pepper is an important element of five-spice powder and adds a lift and biting citrus flavour to roast meats.
Uses

Crush and use in marinades or seasonings for roast meats, particularly duck or pork.
