  • 250g diced pork (belly is best)
  • 1 medium red onion
  • 4 cloves of garlic
  • Fresh ginger
  • 3 chillies (any colour)
  • 10g bunch of coriander (optional)
  • 1 tbsp vinegar (white wine or cider vinegar is best)
  • 1 tsp sugar
