Special Fried Rice

Special' fried rice is a delicious jumble of chicken, pork and prawns together with bits of egg and seasoned rice. Once you've mastered the technique, you can use pretty much any mix of ingredients you prefer - even leftover scraps from a Sunday roast or a bit of chopped salami or cured meat would work brilliantly!

Shopping List

  • 500g cold pre-cooked rice (any type) or cook 250g dry rice in a covered pan with 375ml water then leave to cool
  • 1 large chicken breast or boneless thigh (approx. 200g) - cut into small bite-size pieces, or use shredded pre-cooked chicken
  • 2 rashers of bacon (any type) or use 2 slices of ham - thinly sliced into matchsticks
  • 100g prawns (any type) - cut into bite-sized pieces if large
  • 100g peas (fresh or frozen) or use 1 bunch of thinly sliced spring onions
  • 1 clove of garlic - finely grated or crushed
  • Fresh ginger - finely grated or chopped to make 2 tsp
  • 2 eggs (any size) - beaten
  • 2 tbsp soy sauce (any type)
  • A pinch of sugar
  • 1 tbsp sesame oil (optional)
