Here we’ve got a comfort food favourite - cauliflower cheese but we’re giving it a delicious, spicy Indian twist! Serve it with crispy jacket potatoes or a pile of buttery naan breads as you prefer.

A recipe well worth revisiting.

This Spicy Cauliflower Cheese is a real winner. Creamy, comforting and just the right level of heat to keep things interesting. The best part was the timing. After my wife suggested I make it for dinner, my phone cheerfully popped up with a photo memory of the very same dish labelled “on this day” 2020. We loved it then and, happily, we loved it just as much all over again today. A recipe well worth revisiting.

Not the most flattering of pictures, but it was lovely! I used leftover Parsnips and Sweet Potato (from the excellent Root Veg Pakora Recipe) along with Cauliflower. We love the Curry Legend Mac & Cheese and this was similarly tasty, the Methi really shining through. Made as a side along with a more "traditional" Sunday Dinner... another step towards a World Palate!

We weren't sure about this - after all how can you improve on Cauliflower cheese? - and how was a curry flavouring going to go with cheese? But we were pleasantly surprised how tasty is was. It was easy to do - a little bit more faff than normal but the flavours actually worked really well with the cheesy goodness. Not too hot and with a sort of 'roasted' spices addition. There was some leftovers which reheated well the next day. Interesting experiment but will probably stick to plain cheese.
