Spring Rolls

Making your own spring rolls is an extremely satisfying activity, and you can customise this simple recipe to include all kinds of different ingredients - thinly sliced mushrooms, leeks, cabbage, shredded duck or pork all work very well. These spring rolls are easy to fry in a pan, but you can also get very good results in the oven or air fryer (just turn regularly, brushing with oil each time).

Shopping List

  • 1 bunch of spring onions - thinly sliced (or use 100g peas)
  • 1 large carrot - peeled and coarsely grated
  • 250g beansprouts or use 400g tin of beansprouts - drained
  • 1 tbsp soy sauce (any type)
  • 2 tbsp cornflour
  • 4 spring roll wrappers or use filo pastry - cut into 4 large rectangles about 20cm x 30cm
  • Oil for frying (sunflower or vegetable oil is best)
