Sri Lankan Wattaka

Wattaka is a simple dish of curried pumpkin made with coconut milk and flavoured with cinnamon and mustard seeds (both spices are key to the cooking of Sri Lanka). It’s a delicious, mild, sweet-scented curry and with the extra greens in this recipe makes a really satisfying and easy to cook autumnal dinner.

  • 1 squash or small pumpkin (roughly 800g prepared weight)
  • 200g spinach or chard (fresh or frozen)
  • 1 red onion
  • 3 cloves of garlic
  • Fresh ginger
  • 2 lemongrass stalks
  • 1 lime
  • 400ml full fat coconut milk
