Sweet Potato Sinkonta

This recipe takes inspiration from the Aegean dish ‘sinkonta’, which typically consists of baked spiced pumpkin topped with crispy onions and finished with yogurt. We’re putting a Taco legend twist on it by baking sweet potato then topping with sour cream, hot chipotle butter and toasted pumpkin seeds for extra crunch!

  • 10g bunch of coriander (optional)
  • ½ lime
  • 30g butter (or dairy-free alternative)
  • 150g sour cream (or dairy-free alternative)
  • 2 tbsp tomato puree
  • 20g pumpkin, sunflower seeds or flaked almonds
  • 1 tbsp flour (any type)
